Hey Y’all! Happy Tuesday!

I mentioned in my post yesterday, that our area got quite a bit of snow & ice this past Thursday….11 inches to be exact!

All of our local schools cancelled classes and even my employer shut down for the day.  We were “snowed in” for the largest part of the Friday & Saturday. I know some people hate being stuck at home, but I personally kind of enjoy it. I love the lazy time with my family…cuddling, watching movies & eating comfort foods!

Speaking of comfort foods…I don’t know what it is about snow, and being trapped in your house that makes you crave all that yummy stuff, but let me tell you, we ate GOOD this past weekend! We ate lots of soup, we had fresh chocolate chip cookies straight out of the oven, & we made this Easy Chicken Pot Pie Recipe!

OH.MY.HEAVENS. was it FABULOUS!

We got the recipe from my mom, who had made it a couple times before. It had been a few years since I remembered having it at her house, but it sounded perfect for a cold, wintery weekend. My husband LOVED it & to my surprise, the boys liked it too! Because it was so easy to throw together (and because it was such a hit), I think we will definitely be adding it to our dinner routine!

Quick & Easy Chicken Pot Pie Recipe

Ingredients
  • 1 - 10oz can of cream of celery soup
  • 1 - 10oz can of cream of chicken soup
  • 2 cups cooked chicken (diced)
  • 1 cup of frozen mixed veggies (thawed)
  • 2 small potatoes (cooked until soft & cubed)
  • 1-2 packages of pre-made pie crust (2 per package)
  • Salt & Pepper (to taste)
Instructions
  1. Preheat oven to 375 degrees.
  2. Combine soups, chicken, veggies, & potatoes in a large bowl and mix thoroughly. Add salt & pepper to taste.
  3. Line bottom of casserole dish with 2 pie crusts. The crust should come up the sides of the dish & will overlap some in the middle. Trim off any excess. Pour chicken mixture on top. Cover the chicken mixture with remaining pie crusts, pinching the bottom crusts & top crusts together on the sides. Cut slits into the top of the pie crusts before placing in the oven.
  4. Bake 45-60 minutes or until pie crust is golden brown.

**Just a little side note, my mom makes this recipe in a deep, round, casserole dish, using only 2 pie crusts total. I personally did not have a dish like that one, so I opted for a traditional, 9×13 casserole dish instead. Because I used a rectangular shaped  dish, I ended up using 4 pie crusts total. I hope that clears up any confusion!

I can’t wait to fix this dish again! Looks like the cold winter weather is gonna be sticking around for quite some time, maybe I’ll be having it sooner than later! 🙂

  3. I love snow days!! and this recipe sounds simple enough that I may just give it a try. We have snow here today, and it is starting to look nice and white and fluffy outside! If we are going to have winter,,,,I love to see the snow!!
