Hey Friends!!

Did you have a good weekend?

It’s hard for me to believe that August is just around the corner & school will be starting up again soon! Where has the summer gone?! We’ve had so much fun on the lake this summer & hanging by the pool with family. I’m really kind of sad that it’s all coming to end in just a few short weeks!  So, I thought I would drown my sorrows & bake up some yummy treats to make me feel better! I mean, there’s not much a cookie can’t fix….am I right?!

These Six Layer Cookies are sure to turn your day around if you are feeling kind of blue!

Six Layer Cookie Recipe

Six Layer Cookies

Ingredients
  • ¼ cup butter
  • 1 cup graham cracker crumbs
  • 1 cup coconut
  • 1½ cups chocolate chips
  • 1 cup chopped pecans
  • 1 can sweetened condensed milk
Instructions
  1. Preheat oven to 350 degrees.
  2. Melt butter & pour into a 9"x13" pan. Spread butter until bottom of pan is well coated. Sprinkle in graham cracker crumbs.
  3. Pour condensed milk evenly over the crumbs. Layer remaining ingredients in this order: chocolate chips, coconut, & chopped pecans.
  4. Press down firmly with a fork. Bake for 25 minutes or until coconut is lightly browned.
  5. Let cool completely. Cut into squares & serve.

 

This recipe is seriously so easy to throw together!  Just layer the ingredients, throw it in the oven, and voila!

  2. Yum!! I have a recipe like this and it is always a favorite. Summer is going wayyy to fast here as well! The only thing is I no longer have the time crunch feeling of “back to school” My boys are grown and school days are behind me. So summer can feel a little longer !! Your blog has grown sooo much! How much time do you have to spend on it? and how do you do it! Have a wonderful day!

    • Yes! I hate that time crunch feeling! That’s exactly what I’m feeling now! I feel like I only have a couple weeks left of summer & that I need to squeeze in as many activities with the boys as I can! Plus, I feel like I have so much to do to get ready for the new school year! T

      The blog has grown a lot, and I spend more time that I’d like to admit working on it! I’m not really sure how I do it! I guess I just try to plan my posts out as best as I can & try to stick with my plan or schedule as best as possible! It’s not always easy though…especially in the summer!   7. Thank you for sharing this recipe! I have a batch in the oven right now for my husband 🙂 I ran into a problem because I didn’t have any graham crackers in our house, so I substituted some quick oats. I’m hoping this “re-mix” turns out okay! Then again, how can it not… chocolate and coconut are always amazing together.
