Cool & Easy Strawberry Pie with Homemade Graham Cracker Crust

Hey Y’all!

I have a delicious pie recipe to share with you today! It’s light, it’s refreshing & it’s perfect for spring! My mother-in-law made it over Easter weekend and because it was SO DELICIOUS, I had to make another one the following week! 🙂

The recipe for the pie filling actually came from the Kraft website, but what makes the pie REALLY yummy is the homemade graham cracker crust recipe that came from my husband’s grandmother. YUM!!

Homemade Graham Cracker Crust
Cool & Easy Strawberry Pie Filling
1- 3 oz. package strawberry flavored gelatin
1- 8 oz. container of cool whip topping
2 cups of chopped strawberries
2/3 cup boiling water
1/2 cup cold water
Ice cubes

 

Empty 3 oz. container of strawberry gelatin powder into a large bowl. Boil 2/3 cup water & add to gelatin. Stir gelatin powder until completely dissolved.
Then, take 1/2 cup cold water & add enough ice cubes to make 1 cup. Add to gelatin mix. Stir until gelatin is slightly thickened. Remove left-over ice cubes.
Using a whisk, add in cool whip. Stir until strawberry gelatin & cool whip are thoroughly mixed. Then, stir in diced strawberries. Refrigerate for 30 minutes or until mixture is thick & will mound into pie crust.

Homemade Graham Cracker Crust
1 1/3 cups crushed graham crackers
1/3 cup brown sugar
2 tsp cinnamon
1/3 cup melted butter

Using a rolling pin, crush graham crackers until you have the desired amount. Place crushed graham crackers, brown sugar, & cinnamon in a medium sized bowl & stir well with fork, mixing dry ingredients thoroughly. Add in melted butter & stir until graham cracker mixture is completely coated in butter. Press into pie pan.

Add pie filling into pie crust. Refrigerate 6 hours or until firm. Add a dollop of cool whip & sliced strawberries (optional) to top of pie before serving. Enjoy! 🙂

    Tried making this twice now and it is not setting up. It’s been in my refrigerator for six hours. What am I doing wrong? 🙁

      Mine did not set up either, it was very watery. I checked the Kraft website, and the original recipe on their website calls for 4 oz of cream cheese. I’m going to guess that this is what helps keep the pie together better. I am going to add it in next time and maybe add more coolwhip as well.

    • I’m sorry you all are having trouble. I’m not sure what you could be doing wrong. I didn’t have any issues with mine setting up and have made this recipe a handful of times. Are you adding the ice to the cold water?

        Hola! I just tried this for the third time today (the first times mine did not set up). Today it turned out perfectly! Instead of putting it in the refrigerator, I put it straight into the freezer (after adding all the ingredients)– worked like a charm!

  16. I came in today via a search on Pinterest for this recipe. I use to make it years ago when my kids were younger. I have lost the cool whip lid with the recipe on it and yours sounded very “right” to me and it is!I just made this and it has set up fine. Maybe too many ice cubes were used by the folks having trouble with it setting up. You can also try freezing the fruit that you use and I also froze my crust just to make sure as I have had trouble in the past. I make this pie with peaches and peach jello a lot of the time. Today I didn’t have enough peaches so I use half peaches and half strawberries. Yum!!

    I tried this recipe twice today and it would not set up for me either. i see Mary K’s comments, will try it again when I can and cut down on the ice cubes and freeze the fruit and the pie crust. Will post again when I give that a try.

    • Are you using fresh strawberries? If your using frozen frozen in juice, that would be too much liquid. Just a thought.

    Instead if water use strawberry yogurt . i use 2 containers of streaberry yoplait,8 oz cool whip and I package 3 oz of strawberry jello and mix and put in crust out in fridge and whalla… Best pie ever!!!!!!

  19. the only time I’ve eaten this pie it has had cream cheese in it, I’m going to make a pudding pie with the cr. cheese and cool whip or whipped cr. and see what happens.
